As many of you must have realized by now is that I love all vegetables and they are all my favorite ones.
Fennel are so versatile…..try them baked with black olives, tomatoes concasse’ and a sprinkle of parmesan cheese or simply saute’ with EVO oil and butter or breadcrumb and baked…or simply sliced fennel bulb as thin as you can add orange segments and for some extra color and flavor some asparagus tips.
The licorice notes of fennels goes extremely well with the fruity-tartness of oranges and makes the perfect salad for winter time.
