Lips smacking delicious Thai bbq spare ribs. Last week I was craving some yummy Thai food. When I was in Thailand I use to eat pretty often at “Tokyo at the Grill” and this Thai bbq spare ribs remind me of this beautiful restaurant and country.

Ready to celebrate the last day of 2019? To celebrate the beginning of a new decade will party in style and for our main course I decide to prepare Pork loin with dried plum stuffing served with mashed potato and Valpolicella Ripasso red wine sauce will be the star of the evening. In collaboration with @ RoomWine Kenya https://mya-zone.com and Giusti wine, I pair the pork loin with Valpolicella Ripasso and the red wine sauce is made with the same wine.

Pork and clams Portuguese style

Want to impress your guests? Try this flavourful combination of pork and clams, and nobody will be disappointed.

Pork and clams Portuguese style

Ingredients 8 pax
1,5kg baby pork leg
300gr pork fillet
01nos medium size red bell pepper, brunoise
01nos medium size yellow bell pepper, brunoise
01nos medium size yellow onion, chopped
03nos minced garlic clove
50ml dry white wine
500gr fresh clams
10ml EVO oil
Salt & pepper to taste
Chopped parsley to garnish
Pork marination:
100gr red pepper sauce (recipe below)
02nos bay leaves
02nos clove garlic, peeled and crushed
50ml dry white wine
Salt and pepper
Combine all ingredients together.
The night before marinate the pork leg and fillet in the marination.
Cooking day.
Purge clams in salty water for 30 minutes. Change water and repeat other 2 times.
Steam clams for 8-10 minutes or till all clams are fully open.
Pass the liquid trough a sieve, to make sure there is no more sand in the liquid.
Keep clams and liquid aside till need it.
In a non stick pan heat evo oil till hot.
Add garlic and onion to the oil and let it sweat for few minutes.
Remove pork from marination, keep liquid aside.
Add  pork to the pan and let it cook till nicely caramelised, 8 to 10 minutes.
Add white wine and let it evaporate.
Add bell peppers and liquid from marination.
Reduce heat to minimum and braised for 2 hour.
Add clams, with their liquid, to pork and braised for another 10-15 minutes.
Garnish with chopped parsley.

Red Pepper Sauce

500gr roasted bell pepper, peel it.
40ml evo oil
1nos glove garlic
1/2 lemon juice
10gr parsley
Salt and pepper to taste.
Blend all ingredients together.
Make extra and use it in salad or sandwiches.

Chicken meatballs with tomato chutney

 

Chicken meatballs with tomato chutney is one of the tastier snack that you could make. This perfect crowd-pleaser is easy and fast to prepare.  All you need to do is mix all the meatballs ingredients together and shallow fry for a delicious lip smacking snack.

I like to concentrate more on the sauce at the end this is what will give your chicken meatballs the extra kick. I usually make salsa to go with this dish, but my husband was in the mood for some Indian flavor to go with this snack. I like Indian spices and tomato chutney marries chicken flavor superbly well.

 

Here are the ingredients for this delicious tomato chutney:

Mustard seeds

Curry leaves

Roasted gram/roasted split chickpeas                                                     

Fresh tomatoes

Diamond shallots

Red chili

Corn oil

Garlic

Salt and a pinch of sugar.

Tomato chutney

Make a normal tomato sauce with shallots, tomatoes, garlic, oil and salt. Let it cook till tomatoes are soft. Cool it down and blend

Flavor is given by the tempering. Heat oil in a pan add mustard seeds, curry leaves, roasted gram, salt and pinch of sugar, fry for few minutes and your tempering is ready to add to the tomato sauce.

Since I started menu planning my life has been so much easier and stress free, at least food wise. I wake in the morning and I know that most of my preps are done and the only thing left is to pack lunch for the kids and enjoy my day, focusing on what I enjoy the most. This is the perfect example for stress free meal. This dish is best when made in advance and the earthy flavor will pop in your mouth to make your taste buds dance. Enjoy it with baby roasted potatoes or mashed potatoes

Red kidney beans burger

Do you like burgers? I do, but too much red meat is not really healthy. This is my  perfect vegetarian burger for when I crave the real one. You don’t need many ingredients to create this super yummy red kidney burger.

Ingredients are very basic one, red kidney beans, minced onion, an egg, breadcrumbs, salt and pepper. I put in mine grated zucchini as well just to add extra veggies and keep it moist.

Mix all the ingredients together and form burgers

Fry burgers in little EVOO till golden brown.

Toast burger bun, top it with salad leaves, bean burger and good dollop of mashed avocado.

Serve with extra salad like in the picture or good old french fries.

Bolognese sauce

   Bolognese sauce

What are the main ingredients for the perfect Bolognese sauce or Ragu alla Bolognese? Ground meat ( Beef or veal and sometimes pork),the classic soffritto (brounise of celery, carrots and onions), tomato paste and wine. In my recipe I use minced beef and I avoid wine. I prepare this recipe twice a month and freeze whatever is left after making lasagna that get freeze as well.  Let’s get started then. Follow this step by step recipe and prepare the best Bolognese sauce ever.  For full list of ingredients visit Basic recipes .

Heat oil and add cloves, cinnamon stick and bay leaves.

Add brunoise of onion, carrots and celery. Saute till  vegetables are half way cooked.

Add meat to the vegetables. Make sure that the pan is very hot and that all the moist from the vegetables has been evaporated.

Braise for another 10 minutes. Keep stirring the sauce.

Add tomato paste. Mix well to the minced meat.

Add tomatoes.

Add water.

Reduce the heat to minimum and cover with a lead. Simmer for 2 hours.

Adjust seasoning and here is your Bolognese sauce ready to be used for pasta or lasagne.

Fiorentina

Does world-renowned Fiorentina need an introduction? I don’t think so. This are  just few info for the best steak that you can make at home even without a bbq grill.

Make sure that the meat is at room temperature.
Don’t salt meat before cooking, it will make it dry.

The grill pan must be super hot and that means smoking hot.

Grill meat for to 2-3 minutes on both sides.

Coat meat with EVO, fresh herbs and pepper on both side. Finish cooking it on very high temperature oven. Should not be baked for more than 20 minutes.

Before cutting the meat let it rest for few minutes.
Sprinkle with salt before serving it.
I add on mine some thinly sliced garlic for extra flavor.
And now you have no more excuses not to make Fiorentina at home without the bbq grill.
